When I use YouTube it gives the option to watch it in "High Quality" , does anyone know if we would still be able to use that feature when using the G-1?

I somehow doubt it. Speaking as an avid Linux user for the past 10 years..flash on Linux is just horrible. It eats tons of memory and I doubt the device will be able to cope with hq videos of youtube. The youtube player on the G1 is actual flash or is the video first converted similar to how iphone/touch does it?

I've not had a chance to check this on the iPhone 3G, but on my first generation iPhone, it used to automatically set the streaming video quality based on the speed of connection. If I was on an EDGE connection, the video quality was poor, but it automatically changed to high quality as soon as I connected to a WiFi network. I guess this might be the case with Android Youtube player as well.
Resource usage is mostly dependant on the coder. An example of this is the differences between media players. The fancy, bloated (IMO) Windows Media player will play files considerably slower and choppier, using more resources, than the much more basic VLC media player.
Flash video will be a bit more resource-intensive than .h264 video of higher quality, but I can't see it being too big of an obstacle. Being that the interface is a simple search-and-play application, I think it will play it fine.
