depends on what ROM you installed, but it's always better to use the ones provided for you by the developer. if you're using ROM manager, it should be a selection option when choosing the rom you wish to download. you can then use SetCPU to manipulate the kernel to your desired speed.
how are you installing roms and what rom do you currently have running?

ATM I'm running BB 1.1. I have only the free version of ROM manager. I know I should probably just pony up the $4 it costs, but I haven't needed to so far.
I downloaded BB straight from Pete's website, renamed it update.zip, and flashed through SPRecovery. I downloaded all of the OC Kernels from his site, too, but I'm not entirely certain how to use the zip files for them.
ok, choose a kernel and do the same as you did with the ROM. remember to rename the rom to something else so they're not both update.zip in the root of your sd.
if i use SPrecovery, i first rename the rom, place in root folder, and flash. then when it boots up, i rename the rom or remove it from the sd before i rename the kernel and flash the kernel. do know that some roms already come with an o/c kernel, but i don't believe BB does. have fun

So the kernel should be renamed update.zip also?
And Now I can use the "Install from SDCard" Option in ROM Manager. Should I rename the Kernel "update.zip" and flash from ROM Manager?
