I want to get a G1 from TMobile with a web'n'walk dataplan...I think this is called 3G mode?
I'm in the U.S. and don't know about a web'nwalk plan, but I would assume that does mean 3G. Sounds like it anyway. Maybe someone in Europe can clarify this for you.
at home I can let it connect to my router via wireless (wifi?)
Of course.
Will the phone use wifi when available instead of the t-mobile network to go online or do you have to activly switch? Does it show how its online?
It will switch automatically but you have to leave wifi enabled for it to do so and that will shorten battery life. What I do, and it works well for me, is leave 3G enabled and let the phone switch between 2G-3G automatically depending on what's available. I turn on wifi manually when I want it so it's not wasting power constantly searching for a signal. There are several apps available to make changing wireless settings very easy. I just used Anycut to make a shortcut to the wireless settings.
I am taking a long trip...japan...does the G1 work their as a phone? I undestand they have a diffrent sort of network there?
There is some GSM is Japan, but I think most of it is on a variation of CDMA (a-la Verizon in the U.S.). I know T-Mobile offers rentals in Japan you can pop your sim card into. I can't help any more than that. Sounds like time for Google or maybe go to T-Mobile.com for info unless another user here can chime in with more.
I found APNdroid, that should solve the issue of the phone being online (internet) when I dont want it to but still work as a phone?
It will work as a phone regardless of how you setup your data (internet) settings. As a phone, it works like any other cellphone.
