There is an app in the market which does control apeture, shutter spee, and iso. Can't remember the name of it though.
A simple exposure adjustment for the camera would be nice. The camera tends to underexpose most shots, so being able to correct them afterwards (either through an auto exposure or manual) would be great. PicSay has some of this capability, but it's a rather rudimentary brightness/contrast control.

I think the Blackberries have some adjustments they can do in "camera" mode(like exposure, sharpness, ISO). I don't think it's impossible for the G1 to do this via software also. I've noticed with the G1 it likes to auto adjust to the "whole" picture.
For example: If you have a light coloured flower that takes up 25% of the screen while the dark green grass takes up the rest (75%)....the camera will blow out the flower trying to auto adjust to the grass. You end up with a glowing flower.
I do hope we get something of the sort to tinker around with camera settings.
Its pretty pathetic that the Sidekicks awful camera had more controls than the g1.
at the very very very least it should have exposure compensation and white balance adjustment.
Methinks (and hopes) that the major update hinted at by Google for early 1st Q 09 (the one that is supposed to have the virtual keyboard implementation) will have some camera controls. Cross those fingers everyone. None of the updates so far have added any features and functionality as far as I can tell. They are all security and bug fixes. Basically they need to iron out the kinks of the codebase, while they are working on the additional features and THEN add the new features into the stronger backbone.
