If you mean you want to delete the stock app, you can't unless you are rooted. Clearing data simply means removing data you have put in.
I want to change the default email app to a different one. When I go to manage applications, the clear defaults button is grayed out and it says no defaults setSorry, I'm still a noob.

I don't want to delete the stock app, just set another as default.
you need to find the application that's set as default, and clear defaults for that app.
I would assume the email app that comes with the phone would be default, but it won't let me clear defaults.
maybe you can click a mailto link in the browser, and it'll give you the option to set a default.
