The method described in this thread will work. Although it technically isn't an app.

I don't think there's any app that allows you to take screen shots without root... I usually take screen shots with the Screenshot app by Koushik Dutta but it requires root, the only other way I know is by using DDMS from the Android SDK.
Here are the instructions quoted from mobilecrunch.com :

Download and install the Android SDK. Don’t worry - unlike some SDKs, installing the Android kit is completely straightforward.

Enable USB Debugging on the device by going to Settings -> Applications -> Development and checking the proper box.

Plug the Android device into the USB port.

Find the folder containing the SDK you just installed. The location will vary depending on which operating system you’re using, and where you chose to install it. On all platforms, the folder name should begin with “android-sdk-”. For example, the folder for the current build on OS X is “android-sdk-mac_x86-1.0_r1″

Open the tools folder within the Android SDK folder.

Double click the file titled “DDMS”. This stands for Dalvik Debug Monitor Service.

In DDMS, your device should be listed. Highlight it by clicking on it.

In the application’s top menus, go to Device -> Screen capture.

Search before posting. Even the post linked is the 3rd rendition of the explanation therein.

    Seriously... searching gets you results.

Are there any apps that let you take a screenshot without rooting? I've been searching for this for days and haven't found anything, but I find it hard to believe that even iPods can do it yet Google couldn't figure out how to implement a screenshot feature? And I don't really want to root my phone just so I can take a screenshot.

Just download the android sdk and install it. In the tools folder is ddms.bat, with your phone connected to your desktop double click it and you will get a screenshot.
