I have a Rooted Nexus One. I've seen this question asked and the answer is always yes if your rooted.
I wanna remove things like Google Goggles, Twitter, and Amazon MP3 from my phone. How can I do this?

This is from a post I made December 2009 on a G1, but I know root explorer will delete them.
If you have root exploer, it will delete it. Also have you tried it through the terminal.
su
mount -o rw,remount -t yaffs2 /dev/block/mtdblock3 /system
rm /system/app/com.amazon.mp3.apk
The only thing is as long as Cyan keeps it in his rom you will have to delete everytime you flash
